A healthy, filling way to start your day of adventure!
An American classic - the breakfast sandwich. Most commonly consumed at fast food restaurants, these protein packed powerhouses are a staple in our culture.
Our family doesn't eat fast food, but we still love a good breakfast sandwich. It was my mission to make our sandwiches healthier than what we could get from a drive through. Luckily, that wasn't hard.
Let's start by eliminating the butter. Although we do consume butter in our diets, it doesn't mean we need it in every meal. The yellow gold might taste incredible, but it's not a make-or-break when it comes to a breakfast sandwich. I add some olive oil if it's needed, but most of the time the grease from the sausage is plenty.
Next, swap egg whites for whole eggs. Again, we consume eggs in our diet, but it's not necessary to have all the extra fat and cholesterol in every meal. We switch back and forth on our egg choice based on the level of activity we plan on having that day. Some people may be tempted to add salt and pepper to their eggs while cooking, but we've found that the sodium from the sausage is plenty!
For those weary of nitrates and nitrites, you can swap your sausage for something that is uncured. We personally draw the line here and stick with the normal sausage, but you can make it your own!
For the kids - instead of using a large croissant, use a small croissant or an English muffin. We found that our boys struggled to get through eating an entire sandwich, and wasting stuff is a pet peeve of mine!
Buon apetito!
